FCP Webinar: Focus on Fibers: What RDs Need to Know NOW
September 10, 2010Americans continue to be deficient (by half of recommended) in their intake of dietary fibers. For most age and gender categories from 0-5% of people actually meet the recommendations. the 2010 Dietary Guidelines Advisory Committee have again underscored the importance of foods which contain dietary fiber as part of a healthy eating pattern and flagged the low intake of fiber as one of the shortfall nutrients. This webinar will address many nutritional isses as well as share tips to help consumbers construct fiber-rich menus.

Mindy Nelkin is Book Club Chair and an active member of FCP. She is in the hotel/restaurant industry- specifically employee benefits and worksite wellness, with a specialty in clinical ethics and access to health care.

1.How accurate was the nutritional information/science in both of these books?
2.What was your reaction to diet for a small planet and its issues= 20 and 40 years later? Was it more about food, or a political agenda?
3.How did you react to the focus on protein- specifically animal protein?
4.Which book did you enjoy more, and why?
5.Which recipes if any did you prepare?
6.Which “locavore” activity- or how many locavore activities did you try? And have any of them become part of your daily life?
7.Would you recommend either of these books and would you use them in your practices? And if so, how?
